Jaggery factory in Kerala
Gulf News reader Shyjith Kannur spent a day at a jaggery factory in Kerala. Jaggery is traditionally
blended whole cane sugar consumed in Asia, Africa, Latin America, and the Caribbean.

It is the concentrated remains of sugarcane sap that is not separated from molasses and crystals. 

The News Reader for Gulf , Kannur visited the Marayoor hill station located 50 kms from the town of Munnar, which is known for production of sweetest Jaggery in India. He added, most of the traditional sweets in India are made using Jaggery as they add color and sweetness to the sweets. Marayoor hill station has acres of sugarcane fields and its wonderful to visit them. 

Kannur said, visiting the place is truly exciting as there are many small producers of jiggery and the very interesting part is to see the manpower invested in producing the sweetener.

He also added that its gives a wonderful feeling to walk along the fields as you not only see the sugarcane but also small huts where all the process of production are carried out. 


They are not just hut but small traditional facilities, “he said.The preparation of this sweetener also known as jiggery starts from cultivation of sugarcane and the juice is extracted and then cooked in a large vassals and finally after stirring for hours and letting it cool, the jiggery is prepared. After that the thick produce is made into small balls and is made ready to be sold in the market.
